I love meatloaf, mash potatoes, and corn on the cob. For me, meatloaf is definitely great comfort food. This weeks recipe also makes it heart healthy. Meatloaf sandwiches are also great for leftovers. So try this recipe for a tasty treat this week.
I also like serving my meatloaf with a warm cornbread right from the oven
1) Mix all ingredients together.
2) Place in 1 pound loaf pan (preferably with drip rack) and bake uncovered at 350 for 50 minutes.
3) Uncover the pan and continue baking for 12 minutes. Serve and enjoy!
